Sourdough Pizza Crust

A long time weekly tradition in our house is a homemade pizza night making this sourdough pizza crust recipe a staple. My family still gets excited every time I say "it's pizza night". The best part is that this pizza crust is easy to make, requires few ingredients and is far healthier than store bought pizza or take out.



Sourdough Pizza Crust Ingredients

This recipe makes four 8-10" pizza crusts.


  • 100g sourdough discard or active starter

  • 350g water

  • 30g olive oil

  • 500g all purpose flour

  • 10g salt


Instructions for making Sourdough Pizza Crust


  1. The night before making pizza, add ingredients to a bowl and mix ingredients using your hands. Cover the bowl and allow the dough to ferment at room temperature over night.

  2. The next morning, stretch and fold dough inside the bowl. Wet hands with water to prevent sticking as you perform a set of stretch and folds. To stretch and fold, you will gently pull one side of the dough up and fold it over itself, then turn the bowl to repeat the stretch and fold on all four sides of the dough.

  3. Cover the bowl and put it in the refrigerator to cold ferment for up to 48 hours. (At this point, your dough is ready to use. The cold ferment is optional.)

  4. When you're ready to begin making pizza, place dough onto a well flour surface. Divide dough into four equal parts and shape each section into a ball. Leave dough balls on the counter and cover with a towel to rest for 30 minutes as they come to room temperature.

  5. Set oven to broil and begin heating a cast iron skillet on the stove to medium heat. (I use a 10" cast iron skillet.)

  6. While your pan is heating, grab a rolling pin and roll your pizza dough out on a well floured surface into an 8-10" circle. Continue sprinkling flour on your dough as needed to prevent sticking.

  7. Transfer pizza dough crust to hot skillet and immediately top your pizza with sauce, cheese and any additional toppings. Cook for 6-8 minutes in cast iron on the stove.

  8. The bottom of the crust should be brown and slightly charred at this point. Transfer cast iron skillet into the oven. Broil for 4-6 minutes until toppings are fully melted and cheese is bubbling.

  9. Remove from oven, slice and enjoy!
